WHAT IS SOUS VIDE?

You should be careful to distinguish in Sous Vide Supreme Reviews between the commentary on the product  itself and the technique of sous vide.

Sous vide is a cooking process in which food is encased in an airtight plastic pouch (typically vacuum sealed) and cooked for a very long period of time at a very low temperature, usually under 200°F and for many hours, even as long as three days.

The SousVide Supreme countertop sous vide machine is a no-brainer to use.

Its construction is simple – it is basically a large, square water bath, with a rack that holds pouches of food, and a simple control panel to program temperature and, if desired, a timer.

You fill the bath with water, program the temperature, enclose food in a vacuum-sealed pouch (for this you will need your own food-sealer equipment), and put the food pouches in the water for the desired amount of time.

The sous vide machine cooks food to the optimal uniform temperature and will hold it at that temperature for hours without adversely affecting the flavor. Because the temperature of the water is the same as the finished temperature of the food, it will never overcook.

Pros:

1. Compact – doesn’t take a lot of counter space.

3. Simple to use – out of the box only takes about 5 minutes to learn how to set it up and start cooking.   Control panel is simple and easy to use and understand. Cleverly designed rack to accommodate pouches of may different sizes

5. Very accurate temperature maintenance – doesn’t vary by more than 0.5 degrees, even without a re-circulating pump. Temperature button can be set for Celsius or Fahrenheit readings

6. Much cheaper than commercial units, and much safer than used laboratory units!

 

Cons:

1. No vacuum bag sealer in the box. They are not that expensive to buy separately, but you definitely need one

2. Heavy to lift when full of water – can be awkward to fill and move to cooking location, or when you have finished, heavy to lift to the nearest sink and empty of water.

3. Since the top of the lid is unadorned stainless steel, scratches on the top are inevitable.

4. Lid gets very hot  but the built in handles are cleverly placed.

All in all, the SousVide Supreme was simple to use; the temperature is easily set on the touchpad, and a countdown timer can track how long your food has been in the cooker. Best of all, since food is cooked in a plastic pouch, the cooker is easy to clean – just let the water cool, empty it out and dry the interior.
